Maffe

非洲日喺食檔唔只望吓,仲抄咗啲食物名想自己煮. 但係只有一個Maffe google食譜.

Maafe (var. Mafé, Maffé, Maffe, sauce d'arachide (French), tigadèguèna or tigadenena (Bamana; literally 'peanut butter sauce'), or Groundnut Stew, is a stew or sauce (depending on water content) common to much of West Africa. It originates from the Mandinka and Bambara people of Mali. Variants of the dish appear in the cuisine of nations throughout West Africa and Central Africa. <wikipedia.org>

我因為花生醬唔多,只有佢一半份量,我估跟足會好有花生醬味. 呢味餸好好食. 有下次.

Ingredients

  • Oil -- 2 tablespoons
  • Stewing beef, cut into cubes -- 2 pounds
  • Onion, minced -- 1
  • Garlic, minced -- 3 to 6 cloves
  • Ginger (optional), minced -- 1 tablespoon
  • Tomato paste -- 2 tablespoons
  • Tomatoes, peeled, seeded and chopped -- 2 cups
  • Water or stock -- 1 to 2 cups
  • Natural, unsalted peanut butter -- 1 cup
  • Salt and pepper -- to taste


Method


  1. Heat the oil in a large pot over medium-high flame. Add the beef and sauté until lightly browned on all sides, 5-6 minutes. Remove to a bowl and set aside.
  2. Add the onion to the oil in the pot and sauté until translucent, 3-4 minutes. Stir in the garlic and ginger and sauté another 1-2 minutes.
  3. Return the beef to the pot, stir in the tomato paste and cook for about 1 minute. Stir in the chopped tomatoes and bring to a boil. Reduce heat to medium-low and simmer for 8-10 minutes to reduce the volume of the tomatoes somewhat.
  4. Add enough water or stock to loosen the dish to a stewlike consistency. Simmer for another 10 minutes.
  5. Stir in the peanut butter, salt and pepper and simmer for another 40 minutes, or until the beef is tender and oil rises to the surface of the dish. Add water as necessary to keep the dish stewlike.
  6. Adjust seasoning and serve over rice or couscous.

    2. 係呀,非洲friend煮過俾我食,不過係用鷄+鷄蛋。
      要用好多花生醬,所以好香花生醬味,同埋佢尾段加咗舊牛油令個汁更加香。

  6. 好多餐食都會用花生醬,所以我諗味道很不錯罷,有時我煮咖喱也會落一、兩湯匙。

  10. 記得睇電視D非洲人煮食時自己磨好多花生來煮餸,可能就係煮你呢個。我估煮雞會好味D,雞百搭D呀。
