失敗西檸雞

以為整西檸雞我係用'你敢寄'. 但係我呢邊港貨唔係時時有. 都好耐冇整lu.

最近blogwakanan,咁我見我都雞扒起咗,又有檸檬.一於跟!

個醃料醃得幾好味.但係我煎炸到燶燶地. 另外個汁. 開嗰陣見咁白,記得以前睇過話想黃啲就落吉士粉(即係vanilla sauce,我以為). 煮嗰陣乜變咗一pat ?拿拿臨加啲水. 仍然係一pat. 咁算啦,照食. 個汁仲杰過點茄汁. 但係好好味過.

今次失敗作,張相都out focus埋,畀大家睇咁清楚.


材料雞髀肉 1塊
蛋汁1湯匙 
生粉 2湯匙

調味料檸檬汁 2湯匙
水3湯匙 
粟粉1茶匙
糖 1湯匙
鹽 1/3茶匙

醃料鹽1/2 茶匙
糖1茶匙
生抽1茶匙 
胡椒粉少許

做法1.將雞髀肉去皮,去脂肪,抹乾,切件,用醃料拌勻約10分鐘。
2.加蛋汁,沾上生粉;放入熱油中煎炸至金黃色。
3.燒少許油,將汁料煮滾,淋在雞件上,即成 。

    吉士粉係custard powder; can use it to make custard for puff or dessert. We use it to make into batter to fry meat too to make it more crispy, not necessarily only for i..

    西檸雞想黃D應該係落蛋汁啦~ 撈一撈才煎,煎起黎香且唔會黏底。
    基本上調味係落:豉油、粟粉、糖、少少油(亦可以加少少雞粉調味)
    西檸汁另煮。

    唔緊要啦,上次我整 pasta carbonara 超樣衰 Gael 都話我知鄭成功阿媽係邊個啦, 咪 從失敗中吸取經驗囉。早兩個禮拜我整 chocolate soufflé 諗住個 base 整乾身 啲 會幫助 soufflé 升高,點知乾過頭連蛋白都撈唔入,肉酸!

    haha... custard powder is for making custard wo... not lemon sauce wo... if u want the lemon sauce to be more yellowish, u can peel some lemon zest ga ma... anyway, Viel Gluck for your next cooking!

    炸野太大火反而外燶內未熟家..中細火慢慢炸,先可以外表金黃內裡熟透..你用筷子或叉拮得入去,就熟了..

    炸野燒熱油轉中細火得啦...油一定要熱先唔會肥膩...
    汁就用檸檬+糖+水再最後少少生粉芡得啦..唔使落咁多野家
