最近blog友wakanan整,咁我見我都雞扒起咗,又有檸檬.一於跟!
個醃料醃得幾好味.但係我煎炸到燶燶地. 另外個汁. 開嗰陣見咁白,記得以前睇過話想黃啲就落吉士粉(即係vanilla sauce,我以為). 煮嗰陣乜變咗一pat 嘅?拿拿臨加啲水. 仍然係一pat. 咁算啦,照食. 個汁仲杰過點茄汁. 但係好好味過.
今次失敗作,張相都out focus埋,唔畀大家睇咁清楚.
材料雞髀肉 1塊
蛋汁1湯匙
生粉 2湯匙
調味料檸檬汁 2湯匙
水3湯匙
粟粉1茶匙
糖 1湯匙
鹽 1/3茶匙
醃料鹽1/2 茶匙
糖1茶匙
生抽1茶匙
胡椒粉少許
做法1.將雞髀肉去皮,去脂肪,抹乾,切件,用醃料拌勻約10分鐘。
2.加蛋汁,沾上生粉;放入熱油中煎炸至金黃色。
3.燒少許油,將汁料煮滾,淋在雞件上,即成 。

西檸雞想黃D應該係落蛋汁啦~ 撈一撈才煎,煎起黎香且唔會黏底。
基本上調味係落:豉油、粟粉、糖、少少油(亦可以加少少雞粉調味)
西檸汁另煮。

唔緊要啦,上次我整 pasta carbonara 超樣衰 Gael 都話我知鄭成功阿媽係邊個啦, 咪 從失敗中吸取經驗囉。早兩個禮拜我整 chocolate soufflé 諗住個 base 整乾身 啲 會幫助 soufflé 升高,點知乾過頭連蛋白都撈唔入,肉酸!

炸野太大火反而外燶內未熟家..中細火慢慢炸,先可以外表金黃內裡熟透..你用筷子或叉拮得入去,就熟了..

炸野燒熱油轉中細火得啦...油一定要熱先唔會肥膩...
