依家又係時候食蘆筍. 今日電視教煮我飛佛嘅食法. 即刻去買材料整.

Klassischer Spargel
Zutaten für 4 Personen:
2kg Solospargel. Für das Kochwasser: 1 EL Salz, 1/2 EL Zucker, Saft von 1 Zitrone, 1/2 EL Butter, 1 Stück Weißbrot (Semmel)
Zubereitung:
Spargel vom Kopf weg schälen, holzige Enden wegschneiden. Spargelstangen mit Küchengarn zusammenbinden.
Wasser mit Salz, Zucker, Zitronensaft, Butter und Weißbrot aufkochen, den Spargel einlegen. Je nach Stärke zwischen 6 und 10 Minuten bissfest kochen.
煮蘆筍材料: 2kg白蘆筍, 1羹鹽, 半羹糖, 1個檸檬嘅汁, 半羹牛油, 1個白麵包*(用咗Semmel---奧地利德文)
*個麵包係用黎吸走蘆筍嘅苦澀味,唔係食架
方法: 批蘆筍皮(由頭開始批), 切去底部硬嘅部份,然後用繩綁埋一齊(我skip咗呢part)
鹽, 糖, 檸檬汁, 牛油, 麵包放入水煲滾. 然後放蘆筍猛火煲6-10分鐘.
Sauce Hollandaise
Zutaten für 4 Personen:
250g QimiQ, 100g Butter (gewürfelt), 2 Eidotter, Zitronensaft, Salz, weißer Pfeffer.
Zubereitung:
Eidotter mit zwei Esslöffeln QimiQ über Wasserdampf zu einer schaumigen Creme aufschlagen. Vom Herd nehmen und Butter einschlagen. Anschließend das restliche QimiQ beigeben, mit Salz, Pfeffer, Zitronensaft würzen und weiter aufschlagen bis die Sauce einen kompakten Schaum bildet und eine cremige Konsistenz aufweist.
煮Hollandaise汁材料: 250g QimiQ*, 100g牛油切粒, 2個蛋黃, 檸檬汁, 鹽,白胡椒粉
方法: 蛋黃,2羹QimiQ用蒸氣加熱搞勻至cream狀. 離開蒸氣無需再加熱,落牛油搞勻, 然後落埋其餘嘅QimiQ,“發“ 到creamy. 加檸檬汁, 鹽,胡椒粉調味.
*QimiQ Cream Base is the first Cream Base with only 15 % fat.
It contains 99% fresh cream and 1 % top quality gelatine, is neutral in taste, completely versatile and therefore perfect for hot or cold, sweet or savoury dishes.(information from QimiQ's homepage)
後記: 我只係買咗500g蘆筍. Hollandaise汁照整4人份因為QimiQ一pack係250g.唔煮晒佢都唔知用黎煮乜好. 煮Hollandaise汁時落咗1個檸檬嘅汁,太酸喇. 下次半個應該ok.

Classic asparagus with Hollandaise sauce
Ingredient for 4 people
2kg white asparagus, 1 sp salt, ½ sp sugar, juice from 1 lemon, ½ sp butter, 1 piece of white bread.
Preparation (asparagus)
Peel the asparagus from the top and cut out the woody ends. Tie the asparagus together with a kitchen thread. Boil water with salt, suger, lemon juice, butter and bread, then put the asparagus to that boiling water and cook for 6 to 10 minutes with strong fire.
Ingredient for sauce
250g QimiQ, 100g butter (diced), 2 egg yolks, lemon juice, salt, white pepper
Mix the egg yolks and 2 sp of QimiQ over steam until it is creamy. Bring away the mixture from heat and mix butter in. Then put the rest of the QimiQ with salt, pepper and lemon to season. Beat the mixture until it is creamy. Ready to service.

我去 咗Nurnberg, Bamberg同Mainz啊! 因為老公個姪女communion咯!不停 食啊!哇, QimiQ 原本好似布甸咁? 等我去搵搵先,如果搵唔到,唯有用住粉先啦。。。可能7月又會去 德國, 到時一定要 記得買先得!

我剛去了德國幾日, 買了很多 白 蘆筍啊! 但我在這裡還未找到QimiQ啊,在 德國又唔記得買渦 不過我買了很多Knorr的 Hollandaise粉咯。。。 暫時用住先!

Did you enjoy your trip? 去咗德國邊處呀 ? 我 唔知 QimiQ 可唔可以用 cream 代替 . QimiQ 原本好似布甸咁 , “ 發 “ 咗之後就好似 cream. 呢度超市係放喺咖啡 嗰欄架 .

好得意0既食法!好似唔係咁難整,得閒都試吓先! 我通常係用bacon wrap住放入焗爐焗,味都唔駛較,方便到不得了!
