菠蘿炒牛肉

菠蘿炒牛肉我好鍾意食架.可惜牛肉太騷我煮唔番亞媽嘅味道,所以冇再整.

多謝各位上次騷味嘅提議, 我決定用薑汁試吓,一來可以消滅咗舊薑.

上次用咗1/3 ,今次又係用1/3整菠蘿炒牛肉. 醃肉時除咗用薑汁,仲落咗糖同豆粉.撈嗰陣怪怪地,牛肉片變咗牛肉絲. wok...!黐晒.唯有起勢剷啦. 然後加罐頭菠蘿啲水. ?? 乜牛肉片變咗免治牛嘅?





雖然唔係一片片牛肉,但係今次冇咗騷味.終於煮到亞媽嘅味道.

    吓!我岩岩睇到,你用火鍋果種生牛肉炒?唔係嘛~ 唔怪之得散曬啦!果D生牛肉片,除左火鍋,只係適合韓燒加調味醬食,快炒就勉強可以。

    我炒菠蘿牛肉,會加一些自家醃製的子薑,好好味架!
    消滅舊薑﹖磨汁做薑汁撞奶!又或者用D薑汁來醃豬扒同雞扒!

    你有嘗試的毅力,真係值得欣賞!
    牛肉要林,除左買料要靚之外,我記得有人教過:要啤水過夜,醃時要落糖、喼汁、油、少少豆粉、少少豉油咁上下。D種係較傳統既做法。

    remember, dun use "salt" to marinate the beef r... so tht's y i suggest adding a bit of soya sauce la... then that will be watery r ma, so add a bit corn starch... as adding the corn starch will make the beef sticks to the pan, so i suggest adding some drops of oil to marinate the beef together la... hope it helps... btw, if u want u can add some pepper to season the beef together gei... rememeber not to cook pineapple or any fruit for too long in frying the chinese dishes...     醃牛肉唔應該落薑汁!我用的方法,跟阿EUREKA教的一樣,有時候我還會在炒好的牛肉中加很少的酒!

    dun use ginger for pineapple beef r...u can juz use some oil la (1-2 drop, to prevent sticking the beef together n on the pan la), a bit of soya sauce la, some corn flour la, some sugar la...then marinate it for 15 minutes la... then u saute the beef first in the pan, and finally adding the pineapple trunks when the beef is 80% cooked... dun turn over the beef slices too often r....
