最近見blog友小白羊整牛丼,搞到我突然懷念吉野家. 想食,唯有自己整囉.
咁噚日摷番本食譜書出嚟. 呢本書係我初初嚟嗰時喺一個美國賣日本嘢嘅網站買(上上一次返香港喺Sogo都見有呢本書).但係見佢好多嘢都要用味醂,嗰時又唔知乜嚟喎.所以呢本書就入咗冷宮喇.
材料Ingredients(2人分 serves 2)
牛ばら肉(薄切り)200g、玉ねぎ1/2個、あさつき2~3本、紅しょうが適宜、七味唐辛子適宜、ご飯 丼2杯分、だし汁1カップ、酒 大さじ2、砂糖 大さじ11/2カップ、みりん 大さじ2、しょうゆ 大さじ3.
7oz beef plate, thinly sliced, ½ onion, 2 or 3 leaves asatsuki chive, Beni-shoga red vinegared ginger, Shichimi seven-spice chili mix, 2 donburi bowl portions of rice, ¼ U.S. Cup stock, 2 Tbsps sake, 1 ½ Tbsps sugar 2 Tbsps mirin sweet cooking sake, 3 Tbsps soy sauce
作り方 Directions
1.具材の下ごしらえをする。牛ばら肉は食べやすい大きさに切る。玉ねぎは皮をむき、くし切りにする。あさつきは斜め切りにする。 Prepare the ingredients. Cut the beef into bite-sized pieces. Peel the onion and cut lengthwise into four to six wedges. Cut the asatsuki chives diagonally
2.鍋にだし汁と酒を入れて煮たて、玉ねぎ入れ、しんなりしてきたら牛肉をほぐすように入れる。牛肉の色が変わり始めたら、砂糖とみりんを入れ、味を含ませるように2~3分煮る。途中アクが出たらまめにすくい取る。 Put the stock and sake into a pot and bring to boil. Put the onion and when softened, add the beef by tearing apart. When the beef starts to turn white, add sugar and mirin. Simmer for 2 to 3min so that the ingredients get seasoned thoroughly. Skim off the foam frequently.
3.2の鍋にしょうゆを回し入れ、煮汁が2/3くらいになるまで火を弱めて煮含める。 Pour the soy sauce into the pot and simmer over a low heat until the liquid is reduced to about 2/3
4.丼にご飯を盛利、煮汁とともに肉と玉ねぎを盛りつけ、あさつき、紅しょうが、七味唐辛子を添えていたでく。Put rice into individual donburi bowls. Place the beef and onion together with the sauce on top of the rice. Garnish with the asatsuki chives, beni-shoga red vinegared ginger, and shichimi seven-spice chili mix.
コツのコツ Tips on Tips
牛肉を煮るとアクが出るのに、ひんぱんにアクを取ること。取らないと苦味が出る。 Remove the foam from the surface frequently when simmering beef. Otherwise, the taste will become bitter.

薄切牛肉我呢邊要去亞洲人舗頭先有. 睇食譜啲牛肉好似都要煮好耐.我驚佢韌,上網見人話用糖醃,咁我又跟. 煮出嚟....好騷呀! (我都預咗. 我呢度啲牛肉好騷架!)
有乜方法除騷味呢? 又要搵高人指教喇.
搵埋阿同鄉嚟試食,大家好耐都冇用筷子食飯喇.味道..如果冇咗騷味都似架.食完,吹吓水,又一晚.
*註>好耐冇打過日文,原來好多字我都記錯讀音.

it is easier to cut it if you freeze the beef. you may put it in the freezer until when it turn hard, take it out for 1-2 hours, it will turn a bit soft (not to..

你本食譜每個 step 都圖文並茂,一流!我不知幾想有本 咁嘅嘢 教我整意大利雲吞,因爲成日都覺得 啲 位好難因,可能始終用現成 lasagne sheets 無 咁 柔軟,餡料一多 咗 就 冚 唔埋。
